Dr. Jiwani’s Keto Chocolate Fudge (Low Carb Dairy-Free) is the perfect treat with that delectable melt-in-your-mouth chocolatey goodness that only fudge can bring. Dr. Jiwani’s Keto Chocolate Fudge (Low Carb Dairy-Free)
Serving: 24 pieces of Keto Chocolate Fudge Depending on Size & Thickness
Dry Ingredients
1 ⅓ cup 320 mL 135 g Raw, Organic Walnuts or Raw, Organic Nuts/Seeds of Choice
¾ cup 180 mL Raw, Organic Cacao Powder Navitas Organics Brand
¼ cup 60 mL Organic Coconut Flour Bob’s Red Mill Brand
Wet Ingredients
2 cup 480 mL Organic Virgin Coconut Oil
2 cup 480 mL Organic Coconut Butter Nutiva Brand
Spices
1 Organic Vanilla Bean, Grind Entire Pod in NutriBullet 600W or Spice/Coffe Grinder Optional
½ teaspoon 2.5 mL Himalayan Sea Salt
Dry Sweetener
½ cup 125 mL Xylitol Health Garden Birch Source; Other Brands made from Corn) (For Low Carb, Paleo, Keto, Autoimmune & Candida Diets)
OR
½ cup 125 mL Organic Coconut Sugar (AVOID on Low Carb, Diabetic, Paleo, Keto, Autoimmune & Candida Diets)
OR
¼ teaspoon Organic Green Stevia Organic Traditions Brand or Organic Stevia Extract NOW Foods Brand
Instructions for Keto Chocolate Fudge (Low Carb Dairy-Free)
Line Large Rectangular 1.7 L Glass Lock Container with recycled parchment paper
Melt the Coconut Oil & Coconut Butter on the lowest heat in a medium saucepan
Grind Xylitol or Coconut Sugar with a coffee grinder or NutriBullet into a powdery, icing sugar-like consistency ***CRITICAL STEP***
Place a sieve over saucepan with the completely melted mixture of Coconut Oil & Coconut Butter
Turn off heat under saucepan
Sift Cacao Powder, Dry Sweetener, Spices into the saucepan
Whisk the dry ingredients into the melted coconut mixture
Toss the Nut pieces in the Coconut Flour / Tapioca Starch to prevent them from sinking
Add the Nut pieces to the chocolate mixture, gently stirring OMIT NUTS if ALLERGIC
Pour the Chocolate Nut mixture into the parchment-lined glass dish
Cover with Glass Lock Lid or Saran Wrap or Bees Wax Paper
Put into fridge to set for 1 hour
Remove from fridge, wait for 15 minutes
Cut into squares and serve with a smile, knowing that healthy goodness prevails in your household
