Keto Coconut Ice Cream: A Summer Delight!
Beat the heat with Dr. Jiwani’s Keto Coconut Ice Cream (Low Carb Vegan Dairy-Free) for a cold, sweet, guilt-free dessert. As the temperatures escalate, it’s hard to resist the smooth, creamy coldness of ice cream. This recipe was inspired by my niece’s homemade ice cream school project. The recipe provided was full of her allergies and I thought if we could share a vegan version, we could spread the health. The problem lies in the many food allergies commonly found in most store bought ice creams. Typical ingredients in ice cream make it an allergy, sugar & preservative nightmare.
Keto Coconut Ice Cream: The Horrors of Store Bought
Store bought ice cream ingredients include milk, sugar, corn syrup, cream, cacao, whey, mono and diglycerides, carob bean gum, guar gum, carrageenan, natural flavour, annatto (for colour), vitamin A palmitate & tara gum. This means it may contain allergens such as dairy, egg, sugar cane, cacao (chocolate), legumes (soy family), corn, gluten & unknown unregulated chemicals (natural flavour).
Keto Coconut Ice Cream: The Cold Creaminess Without Carbs
I chose coconut milk to make this ice cream instead of other homemade recipes using bananas, cashews, avocado or almond milk as they contain potential allergens, more carbs and tend not have the true ice cream taste & texture. The few ingredients within Dr. Jiwani’s Keto Coconut Ice Cream (Low Carb Vegan Dairy-Free) make it a simple, healthy & elegant dessert.
Keto Coconut Ice Cream: No Allergens & No Carbs
Dr. Jiwani’s Keto Coconut Ice Cream (Low Carb Vegan Dairy-Free) is ideal for those looking for a cool, creamy treat without the sugar, chemicals & allergens, while Dairy-Free, Egg-Free, Low Carb, Gluten-Free, Soy-Free, Sugar-Free, Corn-Free, suitable even for those following Paleo, Keto, Vegan & Grain-Free Diets. Coconut ice cream has an incredibly delectable flavour, while being so healthy when homemade in a nutritional way.
Coconut’s Bad Reputation
Historically, Coconut had a poor reputation as a saturated fat that clogs arteries & increases cholesterol. Recently, dramatic media hyperbole has fuelled the fire of these rumours. However, these health concerns are due to hydrogenated coconut oil such as that used in processed foods, such as pastries, desserts & baked goods. Research has these hydrogenated saturated fats linked to obesity, high blood pressure, heart attack & stroke.
Coconut’s Healthful Truth
Conversely, raw, organic coconut has many superfood benefits. Coconut meat is a source of protein, healthy fats, fibre plus various vitamins & minerals including calcium, potassium and other electrolytes. Coconut has the best oil (MCTs) for weight & fat loss. The medium chain fats (MCTs) in coconut are metabolized differently in the body, improving metabolism, fat burning, promote loss of belly fat while improving calorie burning and calorie reduction through fullness.
Coconut For Weight Loss & Brain Food
Coconut contains medium chain triglycerides (MCTs) which digest quickly, don’t require digestive enzymes, absorb easily and go to the liver to make ketones. Ketones suppress the hunger hormone ghrelin, increasing fullness. MCTs are easily accessible for energy as they are not stored as fat. They also supply the brain with energy which is why coconut oil has been linked with improving Alzheimer’s disease (Newport et al 2014).
Proven Health Benefits of Raw, Organic Coconut:
- Alzheimer’s Disease: neurodegeneration, improving memory & brain function
- Cancer Prevention: ketones starve cancer, MCTs kill H.pylori bacteria, lowers free radicals, anti-aging & prevents degenerative diseases
- Diabetes: affects insulin hormone levels for energy & preventing fat gain
- Energy & Metabolism: MCT go to the liver to make ketones for energy & are not stored as fat (helps ketosis)
- Hair & Skin: improves health & texture of skin & hair, moisturizes, reduces inflammation
- Heart Health: improves HDL “good” cholesterol, reduces risk heart disease
- Immunity: lauric acid is anti-bacterial, anti-fungal (candida/yeast Infections), anti-parasitic & anti-viral
- Inflammation & Arthritis
- Kidney & Bladder: reduces bladder infections, prevents kidney disease
- Leaky Gut: improves digestion & absorption of vitamins, minerals & nutrients
- Liver Protective
- Thyroid: supports thyroid levels & function
- Weight & Metabolism: stimulates metabolism, fat burning, calorie utilization, loss of belly fat & improved calorie burning & calorie reduction through fullness
