Recipe: Dr. Jiwani’s Low Carb Vegan Stuffing
(Gluten-Free Dairy-Free Soy-Free Corn-Free for Vegan Paleo Keto Diabetic & Candida Diets)
Dr. Jiwani’s Low Carb Vegan Stuffing provides a solution to the common breaded stuffing which offers nothing but allergens, excess carbohydrates and sleepiness. Thanksgiving & other holidays usually require a featured entree, such as a Roasted Turkey, but a Turkey without Stuffing is like Batman without Robin. The safety of stuffing your turkey is questionable so I prefer to prepare my Low Carb Vegan Stuffing as a side dish to avoid raw turkey bacteria from contaminating it. Technically then it should be called Dressing rather than Stuffing, but I’m old school and that’s what I grew up with. Basically, this is a delectable side dish to partner with your Turkey in your quest for the perfect Low Carb, Gluten-Free Turkey Dinner. This features the natural sweetness of caramelized onions, tartness of apple and crunch from celery & nuts to make an easy and delicious Low Carb Vegan Stuffing.

Dr. Jiwani’s Low Carb Vegan Stuffing
Serving: 10 – 12 servings
Dry Ingredients
3 Organic Apples, ideally Golden Delicious type
3 cups Organic Onions
2 cups Organic Celery
1 cup Organic Nuts (Pick One type of Chopped Walnuts, Pecans, Almonds, Cashews OR Hazelnuts work well)
1 cup Organic Parsley, Fresh
Spices
2 teaspoon 10 grams Organic Sage, Dried
2 teaspoon 10 grams Caraway Seeds
1 teaspoon 5 grams Himalayan Sea Salt
1 teaspoon 5 grams Organic Black Pepper
Wet Ingredients
2 cup (500 mL) Dr. Jiwani’s Homemade Vegetable Stock *Use for Vegan Stuffing
OR
2 cups (500 mL) Turkey Stock Brand JD Farms (Ingredients: Turkey, Onions, Parsley, Garlic, Carrots, Whole Pepper)
¼ cup (62.5 mL) Organic Virgin Coconut Oil (Healthiest) / Avocado Oil / Olive Oil / Ghee
Instructions
Chop Onions in Food Processor into thinly sliced pieces
Heat half of the Oil in a large skillet on medium-low heat, sauté Onions & half of Salt & Pepper
Stir occasionally to caramelize until Onions are golden, approximately 30 minutes
Transfer Caramelized Onions to large bowl
Chop Celery into ½ inch pieces
Peel, core & chop Apples into 1 inch pieces
Chop Nut of Choice into pieces
In the same skillet, heat the remaining Oil over medium heat
Sauté Apples, Celery, Nuts, Caraway Seeds, Sage, Salt & Pepper together, stirring occasionally until slightly softened, approximately 15 minutes
Add Apple – Celery – Nuts Mixture to the bowl with Caramelized Onions
Add Stock & Parsley & mix thoroughly
This can be made ahead of time and refrigerated overnight, reheat in warmer or saucepan

I always make extra and freeze the remaining in Glass Lock Containers to ration the family.
