Store bought ice cream ingredients include milk, sugar, corn syrup, cream, cacao, whey, mono and diglycerides, carob bean gum, guar gum, carrageenan, natural flavour, annatto (for colour), vitamin A palmitate & tara gum. This means it may contain allergens such as dairy, egg, sugar cane, cacao (chocolate), legumes (soy family), corn, gluten & unknown unregulated chemicals (natural flavour).

I chose coconut milk to make this ice cream instead of other homemade recipes using bananas, cashews, avocado or almond milk as they contain potential allergens, more carbs and tend not have the true ice cream taste & texture. ¼ cup 25 g Organic Shredded Coconut Unsweetened Let’s Do Organic Brand (AVOID Sulphites)
Wet Ingredients
2 cans 800 mL Organic Coconut Cream Earth’s Choice Brand (AVOID if Allergic to LEGUMES as Guar Gum)
OR
2 cans 800 mL Organic Coconut Milk Earth’s Choice Brand GUAR GUM FREE: Use if Allergic to LEGUMES
Spices
¼ teaspoon 1.25 g Himalayan Sea Salt
1 teaspoon 5 g Organic Ground Vanilla Organic Traditions Brand
OR
1 pod Organic Vanilla Bean, Split & Scraped
Dry Sweetener
½ cup 100 g Organic Coconut Sugar (AVOID on Low Carb, Diabetic, Paleo, Keto & Candida Diets)
OR
⅔ cup 65 g Xylitol Xyla or Sweet Trading Brands Only Hardwood Birch Source; Other Brands made from Corn (For Low Carb, Paleo, Keto, Candida & Diabetic Diets)
OR
¼ teaspoon Organic Green Stevia Organic Traditions Brand to taste (For Low Carb, Keto, Candida & Diabetic Diets)
Flavour Ingredients
Liquid / Powdered Flavour Ingredients to Add into Vitamix mixture:
- Rosewater 3 tablespoons
- Peppermint Essential Oils 4 – 6 drops
- Saffron ½ teaspoon ground
- Spices: Cinnamon, Nutmeg, Cardamom ½ – 1 teaspoon
Solid Flavour Ingredients to Add into Ice Cream Maker 5 minutes Before Ice Cream Maker Completed:
- Cacao Nibs ½ cup
- Almonds / Pecans / Walnuts / Pistachios / Macadamia ½ cup
- Baking Chocolate Zimt Brand ½ cup
- Dr. Jiwani’s Dark Chocolate Recipe ½ cup
Instructions for Keto Coconut Ice Cream (Low Carb Vegan Dairy-Free)
Freeze Ice Cream Maker Cuisinart Brand Freezer Bowl for 18 – 24 hours if required (most non-commercial models require this) if you are using an ice cream maker
Grind Xylitol or Coconut Sugar with a Coffee Grinder or NutriBullet into a super fine, icing sugar-like consistency.
Combine & Blend all ingredients in Vitamix until completely smooth (except for Solid Favour Ingredients)
Refrigerate mixture for 2 – 3 hours
ICE CREAM Options:
- Pour cold mixture into Ice Cream Maker Cuisinart Brand —> Run for 45 minutes
- Pour cold mixture into small portion size Glass Containers for individual servings
- Pour cold mixture into popsicle molds
- Pour cold mixture into chocolate molds for fun shapes
Freeze ice cream for at least 3 hours
Remove from freezer for 5 – 15 minutes before serving depending on the size of serving (smaller portions thaw faster)
For Chocolate Dipped Ice Cream: DIP each frozen ice cream piece into Dr. Jiwani’s Dark Chocolate
For Chocolate Sauce: Pour melted chocolate sauce onto ice cream
For Chocolate Chunks: Make Dr. Jiwani’s Dark Chocolate and chop into chunks and sprinkle on top
For Delectable Desserts: Serve with Dr. Jiwani’s Fudge Brownies
