I made these for my husband’s birthday party as I wanted him to enjoy a birthday treat, without his many allergies and with MINIMAL CARBS! It’s a perfect treat for those on a ketogenic diet. They were a tremendous hit with everyone, not just those with dietary restrictions. I have included modifications if you want a small amount of low glycemic carbohydrates.
I love using nut or seed butter for my baking as it provides fibre, protein, good fats and antioxidants. Nut & Seed Butters in baking enriches recipes using lower carbohydrates with unmatched moistness. I have experimented with many nut and seed butters, thanks to my handy Cuisinart food processor grinding the nuts & seeds into a smooth buttery consistency.
Nut & Seed Butters can be purchased a local & online grocery stores from Hazelnuts, Almonds, Cashews, Coconut, Macadamias, Walnuts, Pecans, Sunflower & Sesame Seeds. Always check labels for other additives such as sugar, salt and partially hydrogenated oil.

Once my health became an issue, I started reading labels and was astonished to find so much sugar & potential allergens (read “gluten-free” as a carb nightmare, and chock full of other allergies) in the store bought ones, often around 23 – 30 grams of Net Carbs per Brownie!

Ingredients:
Molasses & Honey, Brown Rice Flour, White Rice Flour, Cocoa Powder, Organic Chocolate Chunks (Organic Evaporated Cane Sugar, Organic Cocoa Paste, Organic Cocoa Butter, Non-GMO Soy Lecithin/Emulsifier, Organic Vanilla. Chunks may contain traces of milk protein due to manufacturing equipment.), Tapioca Starch, Sweet Rice Flour, Potato Starch, Sea Salt, Gluten-Free Flavors, Xanthan Gum, Baking Soda.

This year I began my Healthy, Hypoallergenic baking with Dr. Jiwani’s Low Carb Vegan Fudge Fudge Brownies and I couldn’t make them fast enough for my family, so I thought I would share it as it is quite easy to make!

Dr. Jiwani’s Low Carb Vegan Fudge Brownies
Serving: 24 Mini Brownies
Dry Ingredients
1 ¼ cup Organic Raw Coconut Nectar Coconut Secret Brand
OR
1/8 teaspoon Organic Stevia New Roots Brand (For Paleo, Keto, Low Carb)
OR
¼ teaspoon (Pinch) Organic Raw Stevia Organic Traditions Brand
OR
1 ¼ cup Xylitol Health Garden Brand Only BIRCH Source NOT CORN (For Paleo, Keto, Low Carb)
3/4 cup Organic Raw Nut or Seed Flour (Almond Flour is used in Pictures)
½ cup Organic Raw Cacao Powder Navitas Natural or Organic Traditions Brands
3 teaspoon Baking Soda
1 teaspoon Himalayan Sea Salt
Spices
1/16 teaspoon Organic Ground Vanilla Bean Organic Traditions Brand
Wet Ingredients
2 cup Organic Raw Nut or Seed Butter (if Homemade ADD Extra ¼ cup Organic Virgin Coconut Oil)
½ cup Organic Raw Coconut Manna Nutiva Brand
¼ cup Organic Coconut Oil
2 Chia or Flax Egg Substitute
2 tablespoons Organic Ground Chia Seeds OR Organic Ground Flax Seeds
6 tablespoons (90 mL) Filtered Water
Stir together & let sit for 30 minutes
¼ cup Organic Coconut Milk Cha’s Organic Brand has NO GUAR GUM
OR
¼ cup Dr. Jiwani’s Homemade Coconut Milk:
3 cups Filtered Hot Water
1 ½ cups Organic Unsweetened Shredded Coconut Let’s Do Organic Brand
1/16 teaspoon (Pinch) Pink Himalayan Sea Salt
Blend together carefully in Vita-Mix on HIGH until thickened consistency
Store in a Mason Jar & Refrigerate for use within 3 days
Shake to remix before use
Texture Ingredients
1 cup Organic Raw Cacao Nibs
OR
1 cup Organic Raw Nuts or Seeds
Instructions
Preheat oven to 350 degrees
Line glass 9” x 9” baking dish with recycled parchment paper
Grind Nuts or Seeds with food processor into flour-like consistency
Set aside Nut or Seed Flour
Measure & combine Nut or Seed Flour, Cacao Powder, Ground Vanilla, Baking Soda & Himalayan Sea Salt & Stevia (if used) into large mixing bowl
Combine & melt together Nut or Seed Butter, Coconut Oil, Coconut Manna, Coconut Milk & Chia /Flax Egg Substitute & Xylitol or Coconut Sugar on low heat in a saucepan, stirring occasionally
Add melted ingredients into dry ingredients in large mixing bowl
Gently fold in Cacao Nibs or Nuts/Seeds
Pour Brownie Batter into parchment lined glass baking dish, spreading evenly
Bake at 350 degrees for 25-30 minutes or until toothpick comes out clean, depending on your oven, use caution after 20 mins
Bake for a shorter time for ooey, gooey brownies. Baking for the full time creates a more cake-like texture.
Cool for 1 hour to allow it to gel, to prevent breaking or crumbling
Serve at Room Temperature & Enjoy with Dr. Jiwani’s Caffeine-Free Chai Latte
Tips

If you use a larger baking dish creating a thinner brownie, bake for a shorter time ~ 15-20 mins

I always make extra and freeze the remaining in Glass Lock Containers to ration the family.
