Masala Chai (Spiced Tea) has always been reminiscence of home & comfort in my culture, well before it hit the mainstream. The problem is the dairy, sugar & caffeine that my body is so reactive to. I needed a substitute to emotionally simulate and physically satiate. Enter Dr. Jiwani’s Coconut Boo Chai Latte made with Rooibos: Super Food, Super Comfy. Rooibos is harvested on bushes grown only on specific mountains in the Western Cape of South Africa, which produce a nutrient-rich, naturally sweet RED tea equivalent to GREEN tea in its antioxidant and health benefits.

Serving: 4 Cups or 2 Large Cups
Dry Ingredients
4 tablespoons Organic Rooibos Loose Leaf Tea Rishi Brand
Sweetener
1 tablespoon Organic Raw Coconut Nectar Coconut Secret Brand / Xylitol Xyla Brand Only
OR
1/16 teaspoon (Pinch) Organic Raw Stevia Organic Traditions Brand
OR
1/32 teaspoon (Smidgen) Organic Stevia New Roots Brand
Spices
4 teaspoons Organic Chai Spice Mix Gathering Place Brand
(Organic Fair Trade Cinnamon, Fennel, Ginger, Cardamom, Black Peppercorns & Clove Hand Blended)
OR
Homemade Masala Chai Spices
1 Stick Organic Cinnamon
1 Organic Star Anise
5 Organic Whole Black Peppercorns
10 Whole Organic Green Cardamom Pods
10 Whole Organic Cloves
1 tablespoon Organic Fresh, Minced Ginger OR 1/4 teaspoon Organic Ground Ginger
2 teaspoons Organic Ground Nutmeg
½ teaspoon Organic Ground Vanilla Bean Organic Traditions Brand
Wet Ingredients
2 cups Filtered Water
2 cups Organic Coconut Milk Creamer Silk/SO Delicious Brand AVOID if Allergic to Cane Sugar
Use Creamer NOT Milk as it’s too thin, and has more “allergenic?” ingredients
OR
4 cups Dr. Jiwani’s Homemade Coconut Milk:
- 3 cups Filtered Hot Water
- 1 ½ cups Organic Unsweetened Shredded Coconut Let’s Do Organic Brand
- 1/16 teaspoon (Pinch) Pink Himalayan Sea Salt
- Blend together carefully in Vitamix on HIGH until thickened consistency
- For Chai, pour directly into saucepan as the entire mix will be strained later
Instructions for Dr. Jiwani’s Coconut Boo Chai Latte
Grind Homemade Masala Chai Spices (only Peppercorns, Cardamom, Cloves & Star Anise) with a mortar & pestle or coffee grinder
Combine Wet & Dry Ingredients in large saucepan, including Ground & Whole Homemade Masala Chai Spices
Whisk all ingredients together occasionally
Simmer on stovetop for 8 – 10 minutes, making sure it doesn’t boil over
Strain into Mugs or Tea Cups using a Super Fine Strainer
Optional: Save some Coconut Milk to Froth for extra effect
Whipped Cream for Ghost:
Take Refrigerated Coconut Cream Earth’s Choice Brand
Pour out water
Put Cold Coconut Cream in standing mixer
Add Sweetener to taste
Whip Coconut Cream really well until whipped texture
Dollop onto Chai Latte OR
Put in piping bag for design
Add 2 peppercorns for EYES
Scary Chai is worth the spook!!
Tips

The Good Fats in Coconut Milk are important to extract the full benefit of Rooibos, and to minimize the bitter tannins. Remember, good fats will satisfy you without causing fat gain. Keto diets need 70% fat so this is the perfect beverage.

Rooibos is part of the Legume, Pea or Bean family so please AVOID Rooibos if you are allergic

A Substitute Herbal Tea Latte can made by substituting Rooibos for Red Raspberry Leaf Tea
