Give your family a delicious and healthy alternative to the sugar-ridden treats that are everywhere this holiday season. I grew up eating my Mom’s homemade shortbread cookies and this recipe is reminiscent of that. Typically, store bought shortbread cookies have multiple common food allergies including dairy, gluten & sugar, with 12g of carbs per cookie and whoever ate only one?!

Dr. Jiwani’s Keto Vegan Shortbread Cookies (Low Carb, Gluten-Free, Dairy-Free)
Serving: ~ 72 Keto Vegan Shortbread Cookies
Dry Ingredients
4 cup 448 g Organic Coconut Flour Bob’s Red Mill + 6 tbsp to adjust texture if necessary
Wet Ingredients
2 cup 418 g Organic Virgin Coconut Oil SOLID not melted + 3 tbsp to adjust texture if dough is too crumbly
6 Organic, Free Range Eggs
OR
6 tablespoon 96g Organic Sunflower Seed Butter, Smooth
Spices
½ teaspoon 2.5 g Organic Ground Vanilla Organic Traditions Brand
OR
3 pods Organic Vanilla Bean, Split & Scraped
Sweetener
1½ cup 288 g Organic Coconut Sugar (AVOID on Low Carb, Diabetic, Paleo, Keto & Candida Diets)
OR
1½ cup 322 g Xylitol Xyla or Sweet Trading Brands Only Hardwood Birch Source; Other Brands made from Corn (For Low Carb, Paleo, Keto, Candida & Diabetic Diets)
OR
¼ teaspoon Organic Green Stevia Organic Traditions Brand to taste (For Low Carb, Keto, Candida & Diabetic Diets)
Decoration Ingredients
Baking Chocolate Zimt Brand 2 cup
OR
Dr. Jiwani’s Dark Chocolate Recipe 2 cup
AND
Organic Shredded Coconut, Unsweetened 6 teaspoons
AND/OR
Organic Nuts/Seeds, Crushed: Almonds / Pecans / Walnuts / Pistachios / Macadamia 6 tablespoons
Instructions for Keto Vegan Shortbread Cookies (Low Carb, Gluten-Free, Dairy-Free)
Preheat oven to 180 degrees Celsius (350 degrees Fahrenheit)
Line a Baking Sheet with parchment paper; Set aside
Grind Xylitol or Coconut Sugar with a Coffee Grinder or NutriBullet into a super fine, icing sugar-like consistency.
Add all ingredients except Decorations into a Stand Mixer Bowl or Glass Bowl.
Make sure that the Organic Virgin Coconut Oil used is SOLID not melted for this recipe to work out.
Combine & Blend all ingredients using a Stand Mixer or Electric Hand Mixer until a dough starts to form, albeit slightly crumbly. This should happen quickly, within 30 seconds. You can use your hands instead of a mixer, which takes a bit of muscle and mess.
Spread a large size piece of parchment paper onto your counter. Using gloved hands, knead the crumbly dough with your hands to form the dough into a ball. Use the extra coconut oil only if kneading the dough for a minute does not bring it together. Wrap the dough in parchment paper
Refrigerate the dough ball for 15 minutes to firm up
Remove the dough ball from the fridge, unwrapping & spreading the parchment paper on the counter. Using gloved hands, knead the now firm dough to combine and soften the dough slightly, as the heat of your hands softens the coconut oil within. Do not overdo this otherwise the dough will become too soft. If this happens, refrigerate the dough again in parchment paper for 5 – 10 minutes.
Take 1 tablespoon size of dough and roll into a ball. Place the balls 2” apart onto the Baking Sheet as the cookies will melt and spread out in the heat of the oven.
Once all the balls are placed on the Parchment Lined Baking Sheet, use a small fork to flatten the dough balls. This will create nice round shortbread cookies.
Sprinkle extra coconut flour on top of the cookies before baking, if you wish.
Place Baking Sheet on middle rack in the oven
Bake shortbread cookies for 6 – 8 minutes or until cookies are light golden brown on the sides.
Remove the shortbread cookies from the oven, and set aside. Do not touch or move them at this stage as they are too soft.
Allow the cookies to cool down on the baking sheet for 30 – 60 minutes until they reach room temperature to ensure they are completely firm before removing them and decorating them. As the shortbread cookies cool down, the coconut oil hardens, creating a crispy, crumbly shortbread texture.
I usually refrigerate the cookie sheet for 5 minutes after 30 minutes at room temperature to accelerate the cool down and to really harden them before dipping them into Dr. Jiwani’s Dark Chocolate.
For Chocolate Dipped Shortbread: Wait 60 minutes for cookies to set or as above, then DIP each cookie halfway into Dr. Jiwani’s Dark Chocolate, and place back onto parchment paper to set, Sprinkle the chocolate covered shortbread cookies with shredded coconut or crushed nuts or seeds for design & flavour.
For Chocolate Design: Drizzle melted chocolate onto cookies
Storage: Refrigerated 2 – 3 weeks, Room Temperature 10 days, if they last that long!
