Dr. Jiwani’s Paleo Vegan Grain-Free Gingerbread Cookies are the ultimate expression of why I love the holiday season, the warmth & love of family and friends getting together. These gingerbread cookies are the perfect December treat with lovely warming spices and sweetness that only gingerbread can bring.
I believe that you can be allergy-free & healthy year round. Festivities occur almost monthly, and you should not have to suffer physically & mentally to enjoy life, celebrations & food. I have listed an entire holiday meal below to ensure you can provide an allergy-free, healthy festive spread for your family. Health should be a family affair, as it’s a wonderful way to show your love.

Ever since Sesame Street’s Cookie Monster and the many delectable store bought options, I’ve wanted to indulge without triggering the onslaught of my many autoimmune diseases.
Once my health became an issue, I started reading labels and was astonished to find so much sugar & potential allergens (read “gluten-free” as a carb nightmare, and chock full of other allergies) in the cookies, often over 15 grams of Net Carbs per Cookie! Who wants to eat just half a cookie to stay Keto???
Typical Gluten-Free Gingerbread Cookies Ingredient Label (Read in Horror!):
Ingredients: Molasses, Flour Blend (Brown Rice Flour, White Rice Flour, Tapioca Starch, Sweet Rice Flour, Xanthan Gum), Monounsaturated Safflower Oil, Sliced Almonds, Ginger, Cinnamon, Baking Soda, Nutmeg, Allspice, Cloves.
Allergens: Almonds. Produced on equipment that also makes products containing Peanuts, Almonds, Walnuts, Pecans, Coconut, Eggs, Soy And Milk.

I knew I had to adapt a version catering to patients with various modified diets, due to the concern of those allergic or restricted from Gluten, Sugar, Eggs, Butter & Carbs.

Dr. Jiwani’s Paleo Vegan Grain-Free Gingerbread Cookies
Serving: 60 – 80 Cookies Depending on Size & Thickness
Dry Ingredients
4 cups 1000 mL Raw, Organic Nut or Seed Flour Grind SUPER FINE (Almond Flour is used in Pictures)
1/4 cup 60 mL Organic Coconut Flour Bob’s Red Mill Brand
2 teaspoons 10 mL Organic Gluten-Free Baking Powder Bakers Supply House Brand
1 teaspoon 5 mL Organic Xanthan Gum Bob’s Red Mill Brand
Wet Ingredients
¼ cup 60 mL Organic Coconut Oil, Melted
2 large Organic Eggs, Whole
OR
Chia or Flax Egg Replacer (3 Eggs):
270 mL Water
6 tablespoons 90 mL Ground Chia seeds/ Flax seeds
Spices
2 tablespoon 30 mL Organic Ground Ginger
1 tablespoon 15 mL Organic Ground Cinnamon
1 teaspoon 5 mL Organic Ground Vanilla Bean Organic Traditions Brand
¾ teaspoon 3.75 mL Organic Ground Nutmeg
½ teaspoon 2.5 mL Organic Ground Cloves
½ teaspoon 2.5 mL Himalayan Sea Salt
Dry Sweetener
1 cup 250 mL Xylitol Xyla Brand Only Hardwood Source; Other Brands made from Corn) (For Low Carb, Paleo, Keto & Candida Diets)
OR
1 cup 100 grams Organic Coconut Sugar (AVOID on Low Carb, Diabetic, Paleo, Keto & Candida Diets)
OR
6 pinch Organic Green Stevia to taste Organic Traditions Brand
Wet Sweetener
2 tablespoons Molasses
OR
2 tablespoons Yacon Syrup
OR
2 tablespoons Organic Coconut Nectar
Frosting Ingredients
1 cup 250 mL Xylitol Xyla Brand Only Hardwood Source; Other Brands made from Corn) (For Low Carb, Paleo, Keto & Candida Diets)
OR
1 cup 100 grams Organic Coconut Sugar (AVOID on Low Carb, Diabetic, Paleo, Keto & Candida Diets)
2 tablespoon Coconut Butter Nutiva Brand
1 tablespoon Coconut Milk or Coconut Cream or Water
½ teaspoon Organic Ground Vanilla Bean Organic Traditions Brand
Instructions for Paleo Vegan Grain-Free Gingerbread Cookies
Preheat oven to 275 degrees Fahrenheit
Line baking sheets with recycled parchment paper
Prepare Chia or Flax Egg Replacer: mix water with ground seeds, set aside for 15 minutes
Grind Nuts or Seeds with food processor into flour-like, super fine consistency
Measure & combine all dry ingredients into large bowl or Kitchen Aid Mixer: Nut or Seed Flour, Coconut Flour, Baking Powder, Xanthan Gum, Spices and Dry Sweetener: Xylitol or Coconut Sugar or Stevia
Stir in Coconut Oil, Eggs or Chia or Flax Egg Replacer, and Wet Sweetener: Molasses or Yacon Syrup or Coconut Nectar until dough forms
Place 1/2 of dough onto large piece of parchment paper, cover with another equal sized parchment paper
Roll out cookie dough to 1/4 inch thick. If dough is too thin, cookies will become harder & chewier, if dough is too thick, cookies may become softer & cake-like. It’s a Goldilocks situation
Dip various shaped cookie cutters into extra coconut flour to get desired shapes that come off easily & place straight onto baking sheets.
Collect dough scraps and continue rolling and cutting shapes until all the dough is used up
Bake at 275 degrees Fahrenheit for 20-25 minutes or until golden brown and firm to touch. Depending on your oven, use caution after 20 minutes
Remove from oven & let cool for 5 minutes.
Transfer parchment paper with cookies onto counter to completely cool.
Cool Cookies for 1 hour to allow them to gel, to prevent breaking or crumbling
Frosting is optional, if your cookies last that long!
Whip Frosting Ingredients together, adjusting for desired consistency
Pipe frosting onto cooled cookies and allow to set for at least 30 minutes
Serve with a smile, knowing that healthy goodness prevails in your household ?
