Recipe: Dr. Jiwani’s Coconut Gravy

(Low Carb Gluten-Free Dairy-Free Soy-Free Corn-Free for Vegan Paleo Keto & Candida Diets)

 

Dr. Jiwani’s Coconut Gravy solves your gravy dilemmas as typical gravies have flour (gluten/corn), milk/cream (dairy) and extra carbs. The flavour of gravy when you make it from scratch is incredible compared to when made using bouillon cubes. I highly recommend it.

Dr. Jiwani’s Coconut Gravy is ideal for those looking for a delicious accompaniment to your feature entrees, yet Low Carb, Gluten-Free, Egg-Free, Dairy-Free, Soy-Free, Corn-Free, suitable for even those following Paleo, Keto & Grain-Free Diets.

Once my health became an issue, I started reading labels and was astonished to find so many potential allergens (read “organic spices” as that could be anything, nutritional or hydrolyzed yeast, artificial & natural flavours) in the carton stock, gravy and bouillon cubes.

Dr. Jiwani’s Coconut Gravy

Serving:  16 – 20 servings

Corn-Free, Dairy-Free, Egg-Free, Gluten-Free, Legume & Soy-Free, Low Carb, Suitable for Paleo, Keto, Diabetic & Allergy Conscious Diets*

Dry Ingredients

Turkey Gizzards, Refrigerate after Removing From Turkey (Omit for Vegan Gravy)

4 Organic Yellow Onions, Medium Sized

1 Organic Apple

2 tablespoons Organic Coconut Flour

Spices

2 tablespoons Organic Ginger, Fresh

6 cloves Organic Garlic

2 teaspoon Himalayan Sea Salt

½ teaspoon Organic Cayenne (use more for extra spiciness)

Wet Ingredients

8 cups Dr. Jiwani’s Homemade Vegetable Stock (see below) 

OR

8 cups Turkey Stock Brand JD Farms (Ingredients: Turkey, Onions, Parsley, Garlic, Carrots, Whole Pepper)

1 Organic Coconut Milk / Coconut Cream

Instructions

Dr. Jiwani’s Homemade Vegetable Stock:

Make Dr. Jiwani’s Homemade Vegetable Stock first

Dr. Jiwani’s Homemade Vegetable Stock may be frozen or refrigerated when made ahead of time

Coconut Gravy:

Fine chop Onions & Apple, Garlic, Ginger in Food Processor

In a medium pot, add Turkey Gizzards, Chopped Onions, Apple, Garlic & Ginger to Homemade Vegetable Stock or Turkey Stock and bring to a boil

Reduce heat to medium and simmer for 20 – 30 minutes until onions are soft

Add Pan Drippings from Dr. Jiwani’s Roasted Turkey, and simmer for 5 -10 minutes to meld and deepen flavours 

Whisk in Coconut Flour, stirring continuously until Gravy thickens

Remove Turkey Gizzards (Chewy loves these to spice up his Raw Food)

Puree with an Immersion Hand Blender OR transfer the Stock Gravy to a Vita-Mix carefully 

Blend more for a smoother, velvety finish

After pureeing Gravy in the Vita-Mix, pour Gravy back into the Stockpot to reheat on low heat to simmer until Gravy thickens

Add Coconut Milk or Coconut Cream after reheating Gravy to simmer only for a creamy Gravy flavour

Avoid Boiling Soup once Coconut Milk or Coconut Cream is added to prevent a curdled look

Add Himalayan Sea Salt & Cayenne to taste, simmer approximately 10 – 30 minutes

Refrigerate or Freeze Leftover Gravy in Freezer Safe Glass Containers or Mason Jars

Tips

  • AVOID PLASTIC for storage due to cancer causing & hormone disrupting chemicals that leach into the food

  • Please avoid your specific food allergies. This recipe is allergy-free as above, when the correct ingredients are used as per the recipe above

  • Cool Gravy first before pureeing in the Vita-Mix to be extremely careful and prevent burns

  • Always make sure Vita-Mix lid on snapped on shut securely and the dials are on low before starting it

  • Avoid getting a partial 3rd degree burn like I did, when hot soup exploded as the Vita-Mix lid popped off, and scalded my forearm!
