Serving: 60 Coconut Candy Bites
5 cups 300 g Organic Unsweetened Organic Shredded Coconut Let’s Do Organic Brand
2 cups 400 g Organic Coconut Sugar (For Paleo & Low Glycemic Diets)
2 cups 400 g Xylitol Xyla Brand Only (For Low Carb, Keto & Candida Diets)
2 cup 500 mL Organic Coconut Cream Earth’s Choice Brand (Avoid if Allergic to Legumes, as has Guar Gum)
5 tablespoons 146 g Organic Creamed Coconut Unsweetened Let’s Do Organic Brand
Filtered Water to equal 500 mL volume when combined with Organic Creamed Coconut Unsweetened
1 teaspoon 5 g Organic Ground Vanilla Bean Organic Traditions Brand
½ teaspoon 2.5 g Himalayan Sea Salt
IF AVOIDING GUAR GUM: Melt Organic Creamed Coconut Unsweetened on low heat & stir in Filtered Water until a total volume of 500 mL is reached, mix thoroughly
Stir in Ground Vanilla & Himalayan Sea Salt & whisk thoroughly
Place Shredded Coconut in large glass/metal/wood bowl
Add in Coconut Sugar or Xylitol & combine thoroughly
Stir in Creamed Coconut, Vanilla, Salt mix with a metal whisk, as wooden spoons hold moisture & odors
Stir well until there are no lumps
Make sure silicon molds are completely dry to prevent candy from setting
Spoon mixture into silicon molds
Allow to set in freezer for at least 60 minutes
For Chocolated Covered Coconut Candy: DIP each candy piece into Dr. Jiwani’s Homemade Dark Chocolate
Let set at room temperature for 60 minutes

Dark chocolate tempered well may be stored at room temperature, but skin temperature will melt it.
